Within our first couple of years of business, our bar had secured its place among the world’s leading cocktail bars, and by the time Alex became a partner in 2008, we began planning to open more Death & Co bars around the country—and perhaps one day abroad. It wasn’t a matter of if we’d open more locations, but when and where. The when, it turns out, would be more than a decade later. Early negotiations with Death & Co’s two other founding partners, Ravi and Craig, went nowhere, so I put our unfinished agreement in a drawer and focused my attention elsewhere. Alex and I started a hospitality consulting company, Proprietors LLC, and we both moved to Los Angeles. As our new lives and business took off in California, we did our best to put our dreams of opening another Death & Co to rest. We took on numerous projects around L.A., built a proper office and development lab, and expanded our consulting work across the world. As Proprietors LLC grew, so did our ambitions. We formed a partnership with L.A. nightlife impresario Cedd Moses, which allowed us to develop three new bars from the ground up: the downtown cocktail bar and dance club Honeycut, and a pair of bars inside the Normandie Hotel in Koreatown: a lively lounge called the Normandie Club, and an ambitious, omakase-inspired cocktail den called the Walker Inn. The New Millennium B. E. Rock and B. E. Windows were the two companies I worked for from 1985 through 2001. They operated two renowned restaurants that were also the two highest restaurants in the world at the time: the Rainbow Room at the top of 30 Rock and Windows on the World on top of the World Trade Center. In 1999, we lost the Rainbow Room in an unsuccessful negotiation with Jerry Speyer of Tishman Speyer. Two years later, in 2001, we lost Windows on the World in a catastrophe that changed the United States more than any single event since the Civil War. Timing is everything. When the first edition of T he Craft of the Cocktail was released in 2002, the timing was so right and so wrong. The 9/11 attacks in New York, Washington, D.C., and in the sky over Pennsylvania hit like a thunderbolt, turning our world upside down overnight. Life as we knew it ceased: professions were put on hold, entire sectors of the economy were frozen, no one was sure what the future would bring. It was a time of trauma and stark fear. The sudden downturn had a huge impact on the hospitality and entertainment industry. For me, it marked the end of a sixteen-year episode. For America, it was the beginning of an era with an uncertain future. With the approach of the new millennium came the promise of a cocktail resurgence. Voracious Shake Strain Done: Craft Cocktails at Home
Author: Hirsch, J. M. Brand: Voracious Binding: Hardcover Number Of Pages: 272 Release Date: 03-11-2020 Details: Product Description Revolutionize the way you drink at home with simple recipes and common ingredients -- no obscure liquors or fussy techniques needed -- from the editorial director of Milk Street, J.M. Hirsch. Are you done with generic gin and tonics, mediocre Manhattans and basic martinis? You can use pantry staples and basic liquors to produce more than 200 game-changing craft cocktails worthy of a seat at the bar. Many cocktail books call for hard-to-find ingredients and complicated techniques that can frustrate home cocktail makers. Shake Strain Done shows a better way: If you can shake, strain, stir and turn on a blender, you can make great cocktails. No tedious secondary recipes hidden between the lines. No mysteries. You'll know what each drink will taste like before you pick up a bottle. No fancy equipment needed. A shaker, strainer and spoon are as exotic as it gets. The ingredients are mostly pantry and bar staples--things you already have on hand. Every drink is rated by its characteristics -- Warm, Refreshing, Sweet, Sour, Bitter, Fruity, Herbal, Creamy, Spicy, Strong and Smoky -- to help expand your horizons and find more drinks to love. These are drinks with the sophistication of a high-end speakeasy, minus the fuss, like: The Sazerac 2.0 - a spice cabinet update that takes the classic back to its origins A new White Russian that lightens the load with coconut water instead of cream A grownup Singapore Sling that's fruity without tasting like fruit punch A Scorched Margarita that uses the broiler to char those lemons and limes A feisty new Gin and Tonic in which black pepper is the star ingredient And plenty of originals, like the Pooh Bear. Butter, honey and bourbon? Yes, please! And Mistakes Were Made, for tiki time Review Hirsch presents drinks in a 'language that we can taste.' You can peruse the book for a primary liquor, like bourbon, and for a dominant characteristic. So, for instance, if you want a refreshing vodka drink or a warm bourbon tipple on a cold night, the book will guide you.― The Associated Press [T]he recipes: dozens of them, delicious and complex without being effete, full of fresh flavors that, more often than not, will have you saying to yourself, “Why didn’t I ever think of mixing things that way?”― Medium Lots of people are drinking at home during this unsettling era, but they’re getting a little bored with their same old, same old. Shake Strain Done, from J.M. Hirsch, comes at just the right time to break up the tedium. … One of the nice things about Shake Strain Done is that it groups recipes by flavor — warm, refreshing, sweet, sour, bitter, fruity, herbal, creamy, spicy, strong and smoky —not only by the type of liquor. You don’t need anything fancy to make his drinks: as the title says, you simply shake (or stir), strain when required, and sip.― The CulinaryWoman [P]ractical, peppered with useful drink hacks and emphasizing drink flavors (spicy, smoky, herbal, etc.). Enticing illustrations show how the finished drinks should appear. The book is designed to be friendly to home bartenders, but the cocktail recipes are solid, and pros can glean some new tricks too.― Liquor.com A great read with an encyclopedic knowledge of cocktails that’s never too geeky or snobby. Hirsch has an unusual palate and dreams up flavor combinations most of us never could.― The OC Register ...a detailed guide to demystify the process of cocktail making. It’s the kind of book that you’ll want to leave out on your bar: elegant and engaging with an art deco motif and lots of fascinating charts on flavor profiles and useful techniques. But, best of all, it’s filled with dozens of enticing recipes begging for your personal experimentation.― New Hampshire Magazine About the Author J.M. Ten Speed Press The Essential Cocktail Book: A Complete Guide to Modern Drinks with 150 Recipes (TEN SPEED PRESS)
Author: Krigbaum, Megan Brand: Ten Speed Press Color: Teal/Turquoise green Edition: Illustrated Binding: Hardcover Format: Illustrated Number Of Pages: 352 Release Date: 05-09-2017 Details: Product Description An indispensable atlas of the best cocktail recipes—each fully photographed—for classic and modern drinks, whether shaken, stirred, up, or on the rocks. How do you create the perfect daiquiri? In what type of glass should you serve a whiskey sour? What exactly is an aperitif cocktail? A compendium for both home and professional bartenders, The Essential Cocktail Book answers all of these questions and more—through recipes, lore and techniques for 150 drinks, both modern and classic. About the Author MEGAN KRIGBAUM is a wine and spirits writer, a contributing editor at PUNCH, and the former deputy wine editor at Food and Wine. There, she wrote a monthly wine column called "Bottle Service," in addition to regular feature stories pertaining to wine, spirits, and beer. Excerpt. © Reprinted by permission. All rights reserved. INTRODUCTION Over the course of the past three hundred years of drinking history, since the first punch was made, a solid stable of classic cocktails has emerged. These tried-and-true recipes have endured for their distinctive personalities and winning flavors, but they’re also respected for having reliable templates. New York City bartender Sam Ross has said that “classics are the formulas of balance,” which is why many of the new drinks seen on bar menus these days have sprung from this old guard: their formulas work. And, thanks to an ever-growing contingent of devoted and creative bartenders, not to mention the outright explosion of craft spirits into the marketplace over the past fifteen years, it is now possible to get a well-made drink in just about any city in the country. But among the plethora of wittily named drinks made with unlikely combinations of unheard-of ingredients and house-made syrups that has resulted from this renaissance, a conundrum has arisen: which of these drinks are worth keeping around? The best of these modern interpretations are thoughtful revisions of the classics that point to the creativity that can arise from knowing the standards backward and forward. The greatest bartenders will understand a cocktail’s personality, history, and intention—not to mention the ingredient ratio that informs it. In these pages, you’ll find 150 recipes—the classics are all here, from the Gimlet to the Old-Fashioned, alongside the best examples of riffs on them, sourced from some of the greatest bartenders of our time. Though there are successful blueprints, you’ll notice through these variations that there are no hard-and-fast rules. The truth is, drinks are made to be tinkered with. At the most basic level, the classic recipes are composed of modular building blocks: spirit, perhaps citrus, a little sugar, a dash of bitters. All this means that a drink originally based in whiskey can be completely transformed when made with a core of applejack as long as the rest of the cocktail is appropriately adjusted to remain balanced. What becomes apparent when looking at these originals and their descendants together are distinct branches of the cocktail family tree that give bartenders a solid jumping-off point for adding their own leaves. As you shake and stir your way through this book, getting the classics down and investigating this selection of outstanding modern updates, hopefully you’ll feel moved to improvise based on whatever is in your liquor cabinet. These pages will provide you with the tools—and the permission—to ruminate on the pleasures found in using pineapple rum instead of the usual white to make a daiquiri, tossing a few fresh raspberries into a bramble in the peak of summer, using expensive Japanese “whisky” in an old-fashioned, or even adding dry cider to your gin and tonic. Bar media is a great tool to learn all about bartending. They teach you about cocktails, mixology, and all things bartending. Reading can help you build a solid foundation for your bartending skills.
However, reading something can only take you so far. It's important to know the best learning method so you can become an effective and efficient bartender.
Various Ways to Become a Bartender
1. Bartending School
Administrations like these usually hand out a certificate or license after you pass the course. Both documents are valid and are used in the industry. It usually takes 2-3 weeks to get certified, but you can also take college courses on hotel and restaurant management to further your business skills and knowledge.
2. Work as a Barback
If you do not have the financial means to enroll in a bartending school, you can always learn the ropes as a barback. A barback's job is to lift, clean, restock and be a bartender's assistant. You can learn from the current bartender by observing and watching them closely.
3. Work at a Restaurant
If you already have experience as a server but want to work at a bar, getting a restaurant job can help you further along with your goal. Restaurants usually hire people who are flexible and are willing to learn.
You'll find that working in a restaurant requires teamwork. Someone with bartending experience can teach you, and this will come in handy when you need to be stationed at the bar area during busy nights.
4. Mentorship
Making connections is essential; you must be willing to make friends to get further in your plans. You can learn a lot from an experienced bartender, so try to be friendly and ask if they're willing to teach you the ways of mixology.
