Renowned whiskey educator Robin Robinson demystifies the "water of life" in a definitive, heavily illustrated tome designed to take readers on a global tour of the ever-expanding world of whiskey. Across ten robust "classes," Robinson explains whiskey history, how it defined the way whiskey is made in different countries and regions, the myriad styles, how aging and finishing works, and the basics of "nosing" and tasting whiskey. In chapters dedicated to American whiskey (including bourbon, Tennessee whiskey, and rye), American Craft whiskey, Scotch, Irish, Canadian, Japanese, and world whiskies, Robinson presents the best offerings from new and historic producers, how to choose among them, and how to build a collection of your own. Each "class" is a journey into a country's whiskies and makers, including recommended bottles and styles, as well as insider information on how distilleries make their unique offerings. Each chapter includes themed tastings organized by bargain, value, special occasion, and splurge price categories. This thoroughly up-to-date and wide-ranging guide also offers helpful recommendations on how to lead your own tasting, a glossary of terms, food pairings, and tips on everything from glassware to whiskey festivals and how to read a label. Review “If your favorite whiskey lover still doesn’t know what a mash bill is, consider giving them Robin Robinson’s exceedingly enjoyable whiskey course in book form." —New York Magazine “Whisky educator Robin Robinson sets out to demystify the spirit in this book that takes the form of a comprehensive ‘tasting school,’ with ten classes that transport readers to the far-flung corners of the booming whisky world. The heavily illustrated tome delves into whisky history . . . the many styles of whisky and their production methods; and sensory appreciation of whisky—how to nose and taste. Each chapter offers a guided tour through the traditions of major whisky-producing countries . . . and also showcases crucial, if less heralded, hotspots such as India, Sweden, and France. His picks for top offerings from both new and established producers will help whisky lovers add to their lists of bottles to seek out. . . . A must-read for aspiring connoisseurs, and a thorough refresher for seasoned whisky lovers.”—Whiskey Advocate From the Author The intimidating task of writing a book on whiskey comes from the over forty books I have on the subject from whiskey writers I admire. Many of them are mentioned in these pages and are, for the most part, my peers. Along with the historic Alfred Barnard (whom everyone owes a debt to) and the late Michael Jackson, I slavishly followed their books, articles, blogs, and musings, seeking out more information, data and stories on the spirit that I love so well. To all of them, I owe an enormous debt of knowledge and wisdom and hope that I've kept their integrity. With all this talent and wondering what I had to offer on the subject, it was Dave Broom who unwittingly helped me focus. Encountering him soon after I started the project, I whispered sheepishly that I was writing a book on whiskey. Dave was excited and full of congratulations but his was the widest book in the library, and I admitted that I was indeed intimidated by his breadth and scope on the subject. "But Robin," he said "out of all of us, you may be the only one who's actually sold whiskey." That rang like a ship's bell in my head.I've been in the field, working with distributors, retailers, bartenders, and consumers. Through this horticultural lens, a mixed drink becomes a cornucopia of plants.”—NPR's Morning Edition“Amy Stewart has a way of making gardening seem exciting, even a little dangerous.” —The New York TimesSake began with a grain of rice. Scotch emerged from barley, tequila from agave, rum from sugarcane, bourbon from corn. Thirsty yet? In The Drunken Botanist, Amy Stewart explores the dizzying array of herbs, flowers, trees, fruits, and fungi that humans have, through ingenuity, inspiration, and sheer desperation, contrived to transform into alcohol over the centuries. Of all the extraordinary and obscure plants that have been fermented and distilled, a few are dangerous, some are downright bizarre, and one is as ancient as dinosaurs—but each represents a unique cultural contribution to our global drinking traditions and our history. This fascinating concoction of biology, chemistry, history, etymology, and mixology—with more than fifty drink recipes and growing tips for gardeners—will make you the most popular guest at any cocktail party. Amazon.com Review An Amazon Best Book of the Month, March 2013: Peppered with fascinating facts and well-chosen anecdotes, Amy Stewart’s brisk tour of the origin of spirits acquaints the curious cocktail fan with every conceivable ingredient. Starting with the classics (from agave to wheat), she touches on obscure sources--including a tree that dates to the dinosaur age--before delving into the herbs, spices, flowers, trees, fruits, and nuts that give the world’s greatest drinks distinctive flavors. Along the way, you’ll enjoy sidebars on bugs in booze and inspired drink recipes with backstories that make lively cocktail party conversation. Like Wicked Plants, this delightfully informative, handsome volume isn’t intended as a complete reference or DIY guide, but it will demystify and heighten your appreciation of every intoxicating plant you imbibe. -- Mari Malcolm Review "Amy Stewart has a way of making gardening seem exciting, even a little dangerous." —The New York Times "Many boozy books have been published over the years, spilling over with fun facts about absinthe, grog and bathtub gin. What makes Stewart's book different is her infectious enthusiasm for the plants, their uses, their history, and the botanists who roamed the earth finding them. The result is intoxicating but in a fresh, happy, healthy way." —USA Today"The Drunken Botanist is a sipping book, not a quaffing book, best enjoyed in moderation...Part Ripley’s Believe It or Not, part compendium on the order of 'Schott’s Original Miscellany' and part botanical garden tour, albeit with a curated cocktail party at the end . . . a companionable reference and whimsical recitation of historical-botanical trivia, with a little tart debunking." —The Washington Post "Sipping an evening cocktail while flipping through this fine volume, I discovered that Ms. Stewart knew how to change a run-of-the-mill cocktail into an intriguing one." —The Wall Street Journal "A book that makes familiar drinks seem new again…Through this horticultural lens, a mixed drink becomes a cornucopia of plants." —NPR's Morning Edition "Fascinating, well researched and instructive — with appealing recipes too." —Rosie Schaap, New York Times "Gardening can be an intoxicating hobby, especially if the botany is booze-related." —The Associated Press About the Author Amy Stewart is the award-winning author of six books on the perils and pleasures of the natural world. HOW TO USE THIS BOOK That cocktail renaissance has unleashed a tide of products on the market, both new and revived, is a good thing for discerning drinkers. But the ever-expanding mass of terms, classifications and specialized processes can be dizzying to even the most experienced among us. This book is designed to help make sense of today’s liquor shelves and bar menus, defining everything that savvy imbibers should need to know now. With an emphasis on the historical origins of ingredients, the definitions provided here in an A-to-Z format tackle everything from alcohol types to specialized liqueurs, equipment to instructions. Curious about that bottle of Old Tom Gin you found at your local market? Find the definition under “O,” then learn about how it compares to London dry gin by reading the “Gin” entry. Also included are recipes for 115 essential cocktails, the blocks on which contemporary bar programs are built. Whether you’re looking to order confidently at the bar or build out your liquor shelf at home, the terms and recipes provided here should give you everything you need to fluently speak “bartender.” ------------------------------------------- Amaretto Sour For many people, the name of this drink conjures up bottled cocktail mixers and university bar crowds of a certain variety. Portland bartender Jeffrey Morgenthaler’s higher-proof but feathery-light egg white version makes for a sophisticated take on the standard recipe. His version relies on a backbone of strong bourbon, an unusual addition that rounds out the fruit of a high-quality amaretto, a liqueur made from almonds and apricot pits. Egg white blends and buoys the stronger ingredients, creating a more sophisticated cocktail than most of the Amaretto Sours to come before it. Serves 1 1½ ounces amaretto (preferably Lazzaroni) ¾ ounce bourbon, cask proof (Booker’s is a good bet) 1 ounce lemon juice 1 teaspoon simple syrup, rich (2:1, sugar:water) ½ ounce egg white Garnish: lemon peel and a brandied cherry Glassware: rocks Add all ingredients to a cocktail shaker and dry shake. Add ice and shake well. Strain over ice into a rocks glass. Garnish with a lemon peel and a brandied cherry.EAN: 9781607746539Package Dimensions: 6.8 x 4.7 x 1.1 inchesLanguages: English

About the Author MEGAN KRIGBAUM is a wine and spirits writer, a contributing editor at PUNCH, and the former deputy wine editor at Food and Wine. INTRODUCTION Over the course of the past three hundred years of drinking history, since the first punch was made, a solid stable of classic cocktails has emerged. These tried-and-true recipes have endured for their distinctive personalities and winning flavors, but they’re also respected for having reliable templates. New York City bartender Sam Ross has said that “classics are the formulas of balance,” which is why many of the new drinks seen on bar menus these days have sprung from this old guard: their formulas work. And, thanks to an ever-growing contingent of devoted and creative bartenders, not to mention the outright explosion of craft spirits into the marketplace over the past fifteen years, it is now possible to get a well-made drink in just about any city in the country. But among the plethora of wittily named drinks made with unlikely combinations of unheard-of ingredients and house-made syrups that has resulted from this renaissance, a conundrum has arisen: which of these drinks are worth keeping around? The best of these modern interpretations are thoughtful revisions of the classics that point to the creativity that can arise from knowing the standards backward and forward. The greatest bartenders will understand a cocktail’s personality, history, and intention—not to mention the ingredient ratio that informs it. In these pages, you’ll find 150 recipes—the classics are all here, from the Gimlet to the Old-Fashioned, alongside the best examples of riffs on them, sourced from some of the greatest bartenders of our time. Though there are successful blueprints, you’ll notice through these variations that there are no hard-and-fast rules. The truth is, drinks are made to be tinkered with. At the most basic level, the classic recipes are composed of modular building blocks: spirit, perhaps citrus, a little sugar, a dash of bitters. All this means that a drink originally based in whiskey can be completely transformed when made with a core of applejack as long as the rest of the cocktail is appropriately adjusted to remain balanced. What becomes apparent when looking at these originals and their descendants together are distinct branches of the cocktail family tree that give bartenders a solid jumping-off point for adding their own leaves. As you shake and stir your way through this book, getting the classics down and investigating this selection of outstanding modern updates, hopefully you’ll feel moved to improvise based on whatever is in your liquor cabinet. These pages will provide you with the tools—and the permission—to ruminate on the pleasures found in using pineapple rum instead of the usual white to make a daiquiri, tossing a few fresh raspberries into a bramble in the peak of summer, using expensive Japanese “whisky” in an old-fashioned, or even adding dry cider to your gin and tonic. Modern technology makes it easy to make high-quality wines, as new methods for preserving freshly crushed grape juices, either by blast-freezing or through various pasteurization processes, enable them to remain stable and usable for a long period. Wine, by the way, can be made from any number of things besides grapes, including a variety of other fruits and vegetables. Depending on where you live, many of the raw materials for winemaking may be available locally from vineyards, farms, wholesalers, and retailers. Whether you make your wine from scratch or a kit, from juices or concentrates, you'll find that making your own wine is easy and fun! Novices have produced excellent wines by using kits. These provide the necessary ingredients and instructions, and make it a simple matter for first-timers to create delightful wines. We'll explore this approach in chapter 3. Using juices or concentrates also will enable you to produce wonderful wines. Clarkson Potter The Joy of Mixology: The Consummate Guide to the Bartender's Craft
Author: Regan, GaryBrand: Clarkson PotterEdition: 1Binding: HardcoverNumber Of Pages: 400Release Date: 14-10-2003Part Number: 9780609608845Details: Product Description An original book on the craft of mixology is a rare gem. Gary Regan’s The Joy of Mixology is such a gem, one whose genius lies in Regan’s breakthrough system for categorizing drinks that helps bartenders—both professionals and amateurs alike—not only to remember drink recipes but also to invent their own. For example, once you understand that the Margarita is a member of the New Orleans Sour Family, you’ll instantly see that a Kamikaze is just a vodka-based Margarita; a Cosmopolitan follows the same formula, with some cranberry juice thrown in for color. Similarly, the Manhattan and the Rob Roy, both members of the French-Italian family, are variations on the whiskey-vermouth-bitters formula. In this way Regan brings a whole new understanding to the world of cocktails and how to make them. Not only will you learn how to make standard cocktails, you’ll actually learn to feel your way through making a drink, thereby attaining the skills needed to create concoctions of your own. And as Regan explains methods for mixing drinks, how to choose bartenders’ wares and select spirits and liqueurs, and the origins of many cocktails, you’ll feel as though you’re behind the bar with him, learning from a master. Plus, his charming and detailed history of mixed drinks raises this far above the standard cocktail guide fare. With more than 350 drink recipes, The Joy of Mixology is the ultimate bar guide. Ground-breaking and authoritative, it’s a must-have for anyone interested in the craft of the cocktail. From Publishers Weekly As the author of The Bartender's Bible, The Book of Bourbon and New Classic Cocktails, Regan is no stranger to spirits, and in his newest work he sets out to explain "the histories behind various cocktails and perhaps come up with some new theories, if not conclusions, along the way." He accomplishes it all, offering a definitive and entertaining guide to the bartender' trade. Beginning with a solid history of mixed cocktails, Regan then provides an instruction manual for bartenders, asking, "do you have what it takes?" He instructs on everything from bartender etiquette (how to treat a customer who doesn't tip, how to tell someone he's had enough) to the brass tacks of tending bar (how to arrange liquor bottles, how to rim a glass and how to pour out precise measurements). Regan misses nothing, and everything he covers is simply explained; clear illustrations identify the "families" of cocktail glasses, while charts show the "families" of alcohol. It isn't until three-quarters through the book that Regan begins his cocktail recipes. And by that time, readers will finally have the knowledge to prepare each one. They operated two renowned restaurants that were also the two highest restaurants in the world at the time: the Rainbow Room at the top of 30 Rock and Windows on the World on top of the World Trade Center. In 1999, we lost the Rainbow Room in an unsuccessful negotiation with Jerry Speyer of Tishman Speyer. Two years later, in 2001, we lost Windows on the World in a catastrophe that changed the United States more than any single event since the Civil War. Timing is everything. When the first edition of T he Craft of the Cocktail was released in 2002, the timing was so right and so wrong. The 9/11 attacks in New York, Washington, D.C., and in the sky over Pennsylvania hit like a thunderbolt, turning our world upside down overnight. Life as we knew it ceased: professions were put on hold, entire sectors of the economy were frozen, no one was sure what the future would bring. It was a time of trauma and stark fear. The sudden downturn had a huge impact on the hospitality and entertainment industry. For me, it marked the end of a sixteen-year episode. For America, it was the beginning of an era with an uncertain future. With the approach of the new millennium came the promise of a cocktail resurgence.
