  1. Pulse the blanched almonds in the food processor until finely ground. Make sure that no big chunks are left as it can affect the quality of the syrup. 
  2. Combine sugar and water in a pot. Let it boil over medium heat. Make sure that every grain of the sugar is properly dissolved. Do not increase the heat too high or else the sugar might burn and may have a bitter taste.
  3. Once the sugar is dissolved, add in the ground almonds. 
  4. Turn the heat down and cook the mixture for another three minutes. 
  5. Slowly increase the temperature to medium-high. Right before the mixture reaches boiling point, turn off the heat. 
  6. Cover the nut mixture and let it sit for at least 3 to 8 hours. 
  7. Strain the ground almonds using a cheesecloth. The almonds can still be used for another batch.
  8. Add the orange rose water and brandy to the liquid mixture. 
  9. Using a funnel, equally transfer the syrup to the glass jars. 
  10. Store in the refrigerator for 2 weeks.
