Although experienced winemakers rarely use recipes, people who are just starting out find that if they follow instructions carefully, they will make good wines from the outset. Modern technology makes it easy to make high-quality wines, as new methods for preserving freshly crushed grape juices, either by blast-freezing or through various pasteurization processes, enable them to remain stable and usable for a long period. Wine, by the way, can be made from any number of things besides grapes, including a variety of other fruits and vegetables. Depending on where you live, many of the raw materials for winemaking may be available locally from vineyards, farms, wholesalers, and retailers. Whether you make your wine from scratch or a kit, from juices or concentrates, you'll find that making your own wine is easy and fun! Novices have produced excellent wines by using kits. These provide the necessary ingredients and instructions, and make it a simple matter for first-timers to create delightful wines. We'll explore this approach in chapter 3. Using juices or concentrates also will enable you to produce wonderful wines. Grape Pests and Diseases, Index, Other Storey Titles You Will Enjoy, Copyright, Share Your Experience!, CHAPTER 1 PART 1 Selecting the Vines The right wine-grape variety for you is the one that ripens well in your area. Being a home winemaker is a lot like being an amateur opera singer. Both activities entertain friends. When done badly, reaction can range from disgust to token tolerance. When done competently, reaction ranges from enjoyment to admiration for the performer. When done with excellence, the audience will stare in disbelief, rise to applaud, and demand more. The purpose of this book is to bring the reader swiftly and surely to the goal of excellence. As I am a longtime grower and winemaker myself, be prepared to hear me say how I did it, but don't be tempted to follow. Rather, digest the information you find here and proceed as you see fit. Handling a living being such as a grapevine calls for skill and attention to detail. So does making wine. Both, to achieve excellence, must be done artfully. As all artists know, what works for one doesn't necessarily work for another. Same materials, same physical laws, but — voilà! — here a Picasso, there a Van Gogh. There's no way to teach the art; that comes from within. But if your enthusiasm waxes strong enough, art will break through. I've met many artists of the grape in my travels. All shared one common trait: they were determined, no matter what, to do their very best. It's my hope that the material in this book will help you do your very best with this delicate task of home winemaking. The Secrets of Good Wine There's a maxim among traveled wine drinkers that any wine tastes best in the region it comes from (and with that region's food). If that's true, then homemade wines must taste best when drunk at home, so if you are making exceptional wine to begin with, it doesn't get any better than that. There are not many peak experiences available to us for the dollar or so our homemade wine costs. My personal peak experience came during a lunch a few years ago on a sweet, dry, sunny summer day. I knifed a ripe cheese made from our goat's milk and slathered it on chunks of bread fresh from the oven, bread made from grain I'd ground by hand that morning. I washed it all down with a thick, oaky homemade Chancellor. All three foods are the product of predigestion by yeasts or bacteria. All three involve triple partners: goat, bacteria, and human; wheat, yeast, and human; grape, yeast, and human. Lunching in the center of such a maelstrom of interspecies cooperation and pregnant numerology, I never felt more at home nor more in the right place. Auspicious years for humankind are often years of great excellence for wine, as the destinies of human and grape do seem forever intertwined. The immensely great year of 1945 springs to mind. Human and grape collectively sighed in relief at the end of the Second World War and went back to celebrating life with the finest vintage of the century. "The secret of the wine is the grapes it's made from," says Bill Wagner, a longtime New York State winemaker whose Finger Lakes chardonnays can give any white wine a run for its money. The winemaker's role is to protect and preserve the quality of good grapes right into the bottle. Clarkson Potter Wine Simple: A Totally Approachable Guide from a World-Class Sommelier
Author: Sohm, AldoBrand: Clarkson PotterColor: CreamEdition: IllustratedBinding: HardcoverNumber Of Pages: 272Release Date: 19-11-2019Part Number: 60-70 illustrations; 60-70 infographicsDetails: Product Description From the world-renowned sommelier Aldo Sohm, a dynamic, essential wine guide for a new generation NAMED ONE OF THE BEST COOKBOOKS OF THE YEAR BY FOOD52 Aldo Sohm is one of the most respected and widely lauded sommeliers in the world. He's worked with celebrated chef Eric Ripert as wine director of three-Michelin-starred Le Bernardin for over a decade, yet his philosophy and approach to wine is much more casual. Aldo's debut book, Wine Simple, is full of confidence-building infographics and illustrations, an unbeatable depth of knowledge, effusive encouragement, and, most important, strong opinions on wine so you can learn to form your own. Imbued with Aldo's insatiable passion and eagerness to teach others, Wine Simple is accessible, deeply educational, and lively and fun, both in voice and visuals. This essential guide begins with the fundamentals of wine in easy-to-absorb hits of information and pragmatic, everyday tips—key varietals and winemaking regions, how to taste, when to save and when to splurge, and how to set up a wine tasting at home. Aldo then teaches you how to take your wine knowledge to the next level and evolve your palate, including techniques on building a “flavor library,” a cheat sheet to good (and great) vintages (and why you shouldn't put everything on the line for them), tips on troubleshooting tricky wines (corked? mousy?), and, for the daring, even how to saber a bottle of champagne. This visual, user-friendly approach will inspire readers to have the confidence, curiosity, and enthusiasm to taste smarter, drink boldly, and dive headfirst fearlessly into the exciting world of wine. Review “If you’ve ever felt like you ought to be smart about wine, this is the book. Aldo makes wine approachable and never dumbed down.”—Madeline Puckette, co-founder of Wine Folly “A meal at Le Bernardin is always an incredible experience, especially with Aldo’s expert knowledge and effortless charm! It can be intimidating to choose wine, but with Wine Simple we can all feel like world-class sommeliers.”—Chrissy Teigen “Whoever thinks wine is all about snobbery and intricate complexity should open this book! In less than 300 pages, Aldo Sohm manages to open the doors of this universe with wit, fun, and great pedagogy. A perfect, personal beginner’s guide by a legend in our industry, Wine Simple will surely be the bedside book for a new generation of wine lovers.”—Pascaline Lepeltier, Master Sommelier and managing partner, Racines NY “I always feel so at ease drinking wine with Aldo. While he is a renowned sommelier, he always helps me learn and listen to the wine, and this book will make you fall in love with wine again.”—José Andrés, chef/owner of ThinkFoodGroup “This is undoubtedly the best introduction to wine that I’ve ever encountered. I wish I’d had access to a book like this when I was beginning my journey as a wine lover. Aldo Sohm makes oenophilia fun without making it dumb, proving yet again that he is one of the world’s greatest sommeliers—which is to say, a great teacher.”—Jay McInerney About the Author ALDO SOHM is the James Beard Award-winning wine director of Le Bernardin and a partner in the eponymous Aldo Sohm Wine Bar. Sohm was named Best Sommelier in the World in 2008 by the Worldwide Sommelier Association, Best Sommelier in America in 2007 by the American Sommelier Association, and Best Sommelier of Austria four times by the Austrian Sommelier Union. Regardless of our circumstances, jobs, or family commitments we all have exactly 24 hours to use each day. Time is precious and fleeting. It will not wait for any of us to use it up or share with others. Cooking meals and cleaning dishes takes effort and a lot of time. Day-after-day meals need to be made, and then the cleanup begins. It’s a necessary part of life. Blendtec blenders significantly reduce meal prep time and cleanup. When you buy a Blendtec blender you’re not only buying the world’s most advanced blender, you’re also buying yourself more time. How can a blender give you more time? It comes down to technology and design. Our advanced technology and jar design create a vortex, which pulls food towards the blade instead of pushing it to the sides of the jar like our competitors. With Blendtec jars, you won’t waste time tending your blends with a tamper to get all the ingredients down into the blades, and no tamper means one less thing to clean when you’re done. Blendtec blenders can also heat your food during the blend cycle. For instance, if you want soup for dinner, a Blendtec blender can blend it up and heat it up at the same time so it’s ready to serve straight from the blender jar. No need to heat your soup in a pan. Can your old blender do that? No pan and no additional heating time means less cleanup. Not only can Blendtec blenders heat your food, they can also make ice cream. Actual ice cream can be made with the exact same blender that makes soup. Drinks, appetizers, main courses, and desserts can all be made with the same blender using the same jar. The time it takes to make each course could be measured in seconds not minutes or hours. Cleanup for an entire multi-course meal could be as simple as pushing the pre-programmed, self-cleaning button to wash a single jar, and just like that, you’ll be done. There is a reason that having the world's most technologically advanced blender is worth every penny, it gives you more time to focus on life and the people who matter to you.EAN: 8599017976931Package Dimensions: 21.4 x 14.5 x 14.4 inches
