½ cup Maple syrup
½ cup Water
7 pcs. Cloves
10 pcs. Black peppercorns
1 pc. Cinnamon stick
3 pcs. Ripe Fuyu persimmons
2 oz. Lemon juice
½ cup Water
1 oz. Bourbon
½ oz. Brandy
1½ oz. Persimmon puree
1 oz. Spiced maple simple
3-4 drops Angostura bitters
Club soda, to finish
Crush the cloves, cinnamon sticks, and peppercorns using a mortar and pestle.
In a saucepan, combine the maple syrup and water. Bring it to boil before stirring until mixed well enough for your tastes, then add in spices. Cover and let it cool.
Puree the ripe persimmons, lemon juice, and water in a blender.
Smash through a strainer until you get about 1 cup of liquid.
Combine the ice, bourbon, brandy, persimmon, spiced maple syrup, and bitters in a cocktail shaker.
Shake vigorously for about 15 seconds and strain into a coupe glass.
Top with club soda and garnish with persimmon slices before serving.
If you do not have ripe persimmons, you might want to try freezing them because it accelerates the ripening process.
