Ingredients

1 quarter Large watermelon (peeled and cut into small pieces)

2 cups Orange juice

1 bottle of Chilled champagne

Fresh mint leaves to garnish
Directions
In a blender, combine the watermelon chunks with the orange juice. Add sugar or honey if desired.
Strain the watermelon orange mix and chill the mixture in the refrigerator until ready to prepare the drinks.
Pour the watermelon orange mix into champagne flutes or glassware of your choice.
Add the champagne, pouring it gently to avoid making a mess.
Stir gently and garnish with a fresh sprig of mint.
Recipe Note
If you have time, prepare and chill the juice mix overnight. Then, strain it again before serving. This helps prevent the mimosas from overflowing.
