Ingredients

¼ cup Sugar

¼ cup Water

8 sprigs Thyme

1 tbsp. Coarse salt for rimming the glass

1 Lime wedge

3 oz. Freshly squeezed pink grapefruit juice

2 oz. Vodka

½ oz. Freshly squeezed lime juice

½ oz. Thyme simple syrup
-
Lime wheels or thyme sprigs for garnish

For the thyme simple syrup:
In a saucepan, combine the sugar, water, and thyme.
Let the sugar dissolve, remove from heat, and set aside to steep.
Strain into an air-tight container and refrigerate until ready to use.
For the cocktail:
Using the lime wedge, wet the rims of your preferred cocktail glass.
Dip the rims on a plate filled with coarse salt.
In a mixing glass or cocktail shaker with ice, combine the rest of the ingredients.
Shake well until chilled and combined.
