Ingredients

Zest from one medium grapefruit

1 cup Fresh squeezed grapefruit juice

1 cup Granulated sugar

3 sprigs Fresh thyme

½ tsp. Kosher salt

3 oz. Freshly squeezed lime juice

9 oz. Pisco
-
4½ oz. Grapefruit syrup

6 sprigs Fresh thyme for garnish

Directions
For the grapefruit syrup (optional):
Combine the grapefruit zest, grapefruit juice, and granulated sugar in a saucepan.
Let the mixture boil, remove from heat, and set aside to cool.
Strain into an air-tight container and refrigerate until ready to use.
For the cocktail:
In a mixing glass or cocktail shaker, muddle the fresh thyme with salt.
Add lime juice and stir well.
Pour in grapefruit syrup and pisco.
Shake well until well combined.
Serve into your glassware of choice.
