...they can't be sharpened in the usual way. That said, they stay sharp a very long time, and although I have a relatively high-end set of Henckels knives, it's usually the Kyocera I reach for.

Can’t cut on glass or ceramic- it chips and fulls the blade. (Wood or plastic is fine.) I love Kyocera, this specific manufacturer of ceramic knives, the best.
