Ingredients

15 lbs. Tomatoes

2 cups Celery, chopped

3 pcs. Large onions, peeled and cut into chunks

1 pc. Green bell pepper, chopped and seeded

2 pcs. Medium beets

4 pcs. Carrots
-
3 pcs. Garlic cloves, peeled

¼ cup Sugar
-
1 tsp. Black pepper
-
2 tsp. Prepared horseradish

⅓ cup Lemon juice
-
6 qts. Water, or as needed

1 tbsp. Worcestershire sauce to taste

1 cup White sugar

¼ cup Salt to taste
Directions
Juice the following ingredients - tomatoes, celery, onion, green pepper, beets, carrots, and garlic.
Transfer the juice to a large pot and add sugar, black pepper, prepared horseradish, lemon juice, and enough water in order to make a thin sauce. Add Worcestershire sauce to bring flavor and bring to a boil. Let it simmer for 20 minutes.
Prepare 1-quart clean glass jars. In each jar, pour in the mixture leaving ¾ inch of space. Stir 1 tablespoon of sugar and 1 teaspoon of salt into the mixture.
Process the filled jars in a pressure canner at 10 pounds of pressure for 35 minutes.
