Ingredients

1/2 cup Baking stevia

1 cup Water

2 heaping cups of Frozen blueberries

6 oz. White rum, chilled

A handful of mint leaves

2 cups La Croix sparkling water, chilled

Directions
Add baking stevia, 1 cup of water, and the frozen blueberries in a small medium saucepan. Bring to a boil, then reduce and let cook for 10 minutes.
While cooking, mash the blueberries with a fork or spoon.
Once cooked down a bit, add the mixture to a blender and mix until smooth.
Add to a container and let the syrup cool for a few hours, or when you’re ready to serve.
To prepare the cocktail, add a few mint leaves and 1½ ounces of rum to a glassware of choice with ice.
Add two ounces of the blueberry simple syrup.
Top with sparkling water.
Garnish with mint and extra blueberries. Enjoy!
