Lemon Raspberry Bellini Recipe
The Bellini gets a creative makeover in this drink recipe. It's refreshing to sip on this bright and bubbly lemon raspberry bellini, which has a pleasant, somewhat sweet flavor with a citrus sting from the limoncello. The recipe for this cocktail is easy, so you can make this anytime you desire!
3 oz. or 85g Raspberries, giving approx 1 ½ oz for puree
1 tsp. Lemon juice
¼ oz. Limoncello
3 oz. Prosecco or Champagne
Muddle the raspberries with the sugar in a small bowl to release the juices and dissolve the sugar.
Press the mixture through a strainer, keeping the seeds while extracting as much liquid as possible.
Make the raspberry puree (with or without the lemon) ahead of time and chill in the refrigerator for a day or two. You may also make it in bulk to serve numerous cocktails.
