1 Ripe kiwi, peeled and cut in half
18 Fresh tarragon leaves
1½ oz. London dry gin
Âľ oz. Fresh lime juice
½ oz. Simple syrup
3 oz. Chilled seltzer
Tarragon sprig for garnish
Ice
Add kiwi and tarragon to a mixing glass and muddle until the kiwi is liquified.
Add gin, lime, and simple syrup. Fill the mixing glass with ice and shake until chilled and combined.
Strain into an ice-filled glass.
Top with seltzer and stir gently before serving.
Garnish with a tarragon sprig.
