These Floating Eyeball Shots are a fun and creative way to add some much-needed excitement into your next Halloween party. The jello balls look just like an eye, so they're sure to get people talking!
Place 1/2 cup of grape juice in a small bowl. Sprinkle the gelatin on top and whisk it until fully dissolved, 10 minutes. Allow uncovered to sit for an hour so that it softens up again before microwaving again at 20-second intervals just until melted - try not let it get too hot!
Combine the remaining grape juice and ginger ale in a large measuring cup or pitcher with a spout. Whisk them together, then continue gently whisking as you pour gelatin into it. Pour this mixture into 16 shot glasses -- leave about an inch of room at the top to add the eyeballs later!
After 30 minutes of refrigeration, check the texture and consistency. You want it to be thick like cake batter but not fully set or firm so that you can move around an eyeball with your spoon without any problems.
To make an eyeball shot, first put a teaspoon or so of gelatin into each glass until the liquid jelly makes it rise up to form little balls. Then press one ball down onto something flat and even with its surface by pushing from behind without using your fingers (a knife will work).
Chill the glasses until they're firm, about 2 hours. You can make these Jell-O shots several days in advance and then store them for 3-4 more!
