Spritzers have been around for centuries, an Austrian concoction by origin and a famous choice in Europe on warm summer nights. What makes a spritzer is the heavenly combination of ice cold white wine and bubbles, either club soda or sparkling mineral water, creating a wine cocktail that’s not too sweet or heavy. Perfect for sultry days you’re craving something light and cooling. This is the cocktail to have on a fresh green lawn, with sandy toes on the beach, or on a rooftop with a view (and great company).
It’s also incredibly easy to make, a wonderful addition to the repertoire of any self-made bartender. All you need to do is muddle a few essential ingredients and add it to a slightly diluted wine for an effervescent experience. Make sure to start with a white wine you love, nothing you would give away to the stove. This copper jigger is the perfect accessory to measure out the lemon juice, Aperol, and simple syrup.

- 3 oz. white wine
- 3 oz. Pink Grapefruit Perrier
- 10 blueberries
- .5 oz. fresh lemon juice
- .5 oz. simple syrup
- .5 oz. Aperol
- 2 thyme sprigs
- Muddle 1 thyme sprig, lemon juice, simple syrup & aperol in shaker tin
- Strain into wine glass filled with ice
- Add white wine and Pink Grapefruit Perrier
- Garnish with sprig of thyme, lemon wheels, and blueberries
